Delicious Tomato Zucchini Casserole Recipe

 


Zucchini and tomato casserole is a delightful dish that celebrates the fresh flavors of summer produce. Ingredients:
  • Thinly sliced zucchinis, about 2 medium-sized
  • Thinly sliced plum tomatoes, around 5
  • Grated Cheddar cheese, approximately 1 ½ cups
  • Grated Parmesan cheese, about ⅓ cup
  • Minced garlic, from 2 cloves
  • Finely chopped onion, 2 tablespoons
  • Butter, ¼ cup
  • Fine bread crumbs, ¾ cup
  • Dried oregano, ½ teaspoon
  • Dried basil, ½ teaspoon
  • Salt and pepper to taste


Directions:
  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and lightly butter a 9x9-inch pan.
  2. In a large bowl, combine grated Cheddar cheese, Parmesan cheese, minced garlic, dried oregano, and dried basil. Season the mixture with salt and pepper, and set it aside.
  3. Arrange half of the thinly sliced zucchini in the prepared pan. Sprinkle a quarter of the cheese and herb mixture over the zucchini. Then, layer half of the thinly sliced tomatoes on top and sprinkle another quarter of the cheese mixture over them. Repeat these layers.
  4. In a skillet over medium heat, melt the butter. Stir in the finely chopped onions and cook them until they are soft and translucent. Then, add the bread crumbs and cook until they have absorbed the butter. Sprinkle this mixture evenly over the top of the casserole.
  5. Loosely cover the casserole with foil and bake it in the preheated oven for 25 minutes. After 25 minutes, remove the foil and continue baking until the top is crusty and the vegetables are tender, which should take about 20 minutes more.
