Golden Zucchini Patties Delight

 


Cheesy zucchini patties are a breeze to whip up, and they're the perfect solution for those surplus zucchinis crowding your garden.

Ingredients:
  • Grated zucchini, measuring 2 cups
  • Two eggs, well-beaten
  • Half a cup of all-purpose flour
  • Grated Parmesan cheese, half a cup
  • Shredded mozzarella cheese, also half a cup
  • Finely chopped onion, a quarter cup
  • Salt, according to your taste preference
  • Two tablespoons of vegetable oil


Directions:
  1. In a medium bowl, combine grated zucchini, beaten eggs, all-purpose flour, grated Parmesan cheese, shredded mozzarella cheese, finely chopped onion, and salt. Mix the ingredients until they are well combined.
  2. Heat vegetable oil in a skillet over medium-high heat until it's hot and shimmering.
  3. Using a tablespoon, scoop out portions of the zucchini mixture and carefully drop them into the hot oil. Fry the patties in batches, ensuring they are spaced apart, until they turn golden brown on both sides, which typically takes about 2 minutes per side.
