Homemade Quesadilla Recipe

Ingredients:

  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese or cheddar cheese
  • 1 cup cooked chicken, shredded (optional)
  • 1 cup diced bell peppers (mix of colors)
  • 1/2 cup diced onions
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Cooking oil or butter for cooking

Preparation:

  • In a mixing bowl, combine the shredded cheese, cooked chicken (if using), diced bell peppers, onions, black olives (if using), chopped cilantro, ground cumin, and chili powder. Mix well.
  • Divide the mixture equally among the tortillas, spreading it evenly on one half of each tortilla.

Assembling the Quesadillas:

  • Fold the tortillas in half over the filling, pressing gently to seal.

Cooking the Quesadillas:

  • Heat a skillet or frying pan over medium heat and add a small amount of oil or butter.
  • Place a filled tortilla in the skillet and cook for about 2-3 minutes on each side or until golden brown and the cheese has melted.
  • Repeat the process with the remaining filled tortillas, adding more oil or butter as needed.

Serving:

  • Once cooked, remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges.
  • Serve the flavorful quesadilla wedges hot, paired with salsa, guacamole, or sour cream for dipping, if desired.

Enjoy the Flavor Fiesta:

  • Delight in the harmonious blend of gooey melted cheese, savory chicken (if added), and vibrant veggies nestled within warm tortillas - a delightful fiesta for your taste buds! Adjust the fillings to your preference for a personalized quesadilla experience.
