Ingredients:
- 1 pound ground chuck beef (80% lean)
- 4 slices American cheese
- 4 hamburger buns
- 2 tablespoons butter, softened, or as needed
- 4 (6-inch) squares parchment paper
- Salt to taste
- Burger toppings of choice
Directions:
- Before you start grilling, preheat your outdoor grill on high heat and lightly oil the grate.
- Place a cast iron flat-top griddle or a large cast iron skillet on the grill and let it heat up until it starts smoking.
- While the griddle is heating up, take your buns and spread some butter on the inside, then toast them on the flat-top until they are lightly browned. Set them aside.
- Form your meat into 8 loosely-packed balls, each weighing about 2 ounces. Don't pack the meat too tightly.
- Place each meatball on the hot flat-top, cover it with a piece of parchment paper, and immediately smash it down to a 1/4 inch thickness using two criss-crossed sturdy spatulas or the bottom of a small skillet. Sprinkle some salt on the meat.
- Grill the patties for about 45 seconds, until the edges are dark brown and the centers are a light pink color.
- Gently scrape up the patties, flip them over, and immediately cover 4 of them with cheese. Grill for an additional 15 to 20 seconds.
- Stack the plain patties over the cheese-covered patties to make 4 stacks.
- Move each stack to a bun and serve with your favorite toppings.
