Creamy Peanut Udon Noodles

Ingredients:
  1. 1 red bell pepper, thinly sliced
  2. 3 cloves garlic, minced
  3. 1 ½ tablespoons minced fresh ginger root
  4. 3 tablespoons peanut butter
  5. ½ cup chicken broth
  6. 9 ounces of dried udon noodles
  7. 1 ½ tablespoons honey
  8. 1 whole rotisserie chicken, skinned and deboned, meat pulled into large chunks
  9. 2 teaspoons chili oil
  10. 3 tablespoons soy sauce
  11. ¼ cup chopped green onions
  12. ¼ cup chopped fresh cilantro
  13. ¼ cup chopped peanuts


Directions:
  1. Boil water in a large pot and cook the udon noodles until they're firm but tender.
  2. While the noodles cook, prepare the sauce by whisking together chicken broth, ginger, soy sauce, peanut butter, honey, chili oil, and garlic in a saucepan until smooth.
  3. Pour the sauce over the cooked noodles and add the chicken and red bell pepper.
  4. Toss everything together until the noodles are coated with the sauce.
