Homemade Pumpkin Pie

 


Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/3 cup shortening or unsalted butter, chilled and cubed
  • 4-5 tablespoons ice water

For the Pumpkin Filling:

  • 1 can (15 ounces) pumpkin puree
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 can (12 ounces) evaporated milk

Instructions:

Prepare the Pie Crust:

  • In a mixing bowl, combine the flour and salt. Add the chilled shortening or butter cubes.
  • Use a pastry cutter or fork to cut the fat into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, and mix gently until the dough comes together.
  • Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.

Make the Pumpkin Filling and Assemble:

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, whisk together the pumpkin puree, brown sugar, eggs, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and salt until well combined.
  • Gradually stir in the evaporated milk until the filling is smooth and well mixed.

Roll Out and Bake the Pie:

  • Roll out the chilled pie dough on a floured surface to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish.
  • Pour the pumpkin filling into the prepared pie crust.
  • Place the pie in the preheated oven and bake for 15 minutes.
  • Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-50 minutes or until the filling is set and a knife inserted near the center comes out clean.
  • Once done, remove the pie from the oven and let it cool on a wire rack.

Serve and Enjoy:

  • Once the pumpkin pie has cooled, slice it and serve chilled or at room temperature, topped with whipped cream or a sprinkle of ground cinnamon.
