Ingredients:
For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/3 cup shortening or unsalted butter, chilled and cubed
- 4-5 tablespoons ice water
For the Pumpkin Filling:
- 1 can (15 ounces) pumpkin puree
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 can (12 ounces) evaporated milk
Instructions:
Prepare the Pie Crust:
- In a mixing bowl, combine the flour and salt. Add the chilled shortening or butter cubes.
- Use a pastry cutter or fork to cut the fat into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, and mix gently until the dough comes together.
- Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
Make the Pumpkin Filling and Assemble:
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the pumpkin puree, brown sugar, eggs, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and salt until well combined.
- Gradually stir in the evaporated milk until the filling is smooth and well mixed.
Roll Out and Bake the Pie:
- Roll out the chilled pie dough on a floured surface to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish.
- Pour the pumpkin filling into the prepared pie crust.
- Place the pie in the preheated oven and bake for 15 minutes.
- Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-50 minutes or until the filling is set and a knife inserted near the center comes out clean.
- Once done, remove the pie from the oven and let it cool on a wire rack.
Serve and Enjoy:
- Once the pumpkin pie has cooled, slice it and serve chilled or at room temperature, topped with whipped cream or a sprinkle of ground cinnamon.
