Instructions:
Prepare the Carrot Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

- In another bowl, whisk together the eggs and granulated sugar until well combined.

- In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, beating until the frosting is fluffy. Mix in the vanilla extract.
Assemble and Frost the Cake:
- Place one cake layer on a serving plate. Spread a layer of cream cheese frosting over the top.
- Carefully place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
