Homemade Carrot Cake

 

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 large eggs, room temperature
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Prepare the Carrot Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a bowl, sift together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  • In another bowl, whisk together the eggs and granulated sugar until well combined.
  • Gradually add the vegetable oil while continuing to whisk until the mixture is well blended.
  • Stir in the grated carrots, crushed pineapple, shredded coconut (if using), chopped nuts (if using), and vanilla extract.
  • Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.
  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Make the Cream Cheese Frosting:

  • In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar, beating until the frosting is fluffy. Mix in the vanilla extract.

Assemble and Frost the Cake:

  • Place one cake layer on a serving plate. Spread a layer of cream cheese frosting over the top.
  • Carefully place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  • Decorate with additional shredded carrots or nuts, if desired.
